Whey proteins perform important biological functions. They can also be a source of numerous natural bioactive peptides that have positive effect on various physiological systems the body. For research and usage this phenomenon, question these isolating with saving their structure functions is relevant. Considering significant difference in molecular weights, gel filtration promising method. The purpose study was fractionation milk whey using combination different dextran gels. We used work after isoelectric precipitation casein isolation low weight by Sephadex G-25. first protein preparation performed column G-150. further were three sectors from two chromatographic peaks obtained peak contains high fractions eluting volume close to free column. second asymmetric consists mainly β-lactoglobulin α-lactalbumin mixture. third includes polypeptides are not fixed polyacrylamide gel. combined re-fractionated G-100 Electrophoretic analysis repeated chromatography confirmed feasibility choosing certain sequence sephadex. At same time, yield fraction increases 12 ± 1 %, 9 % compared results one (G-100). degree purification α-lactalbumin, according densitometry, 93 5 77 4 respectively.
